Mmmm... Pork Roast

Take a pork roast, sear it on all sides, put it in a crock pot, add a half cup of water, smear a jar of Black Currant Jelly over it, cook it like you normally would. Let cool & serve over rice or on a bun.

Also works in a pressure cooker or a multi cooker.

Shred the leftovers and save in a covered container with the juice marinating them.

Russian Chicken

  • 6 boneless skinless chicken breasts defrosted
  • 1 cup French or Catalina salad dressing
  • 1/2 cup Peach or Apricot Jam (add more jam if you want it sweeter)
  • 1 envelope dry French Onion Soup Mix

Put chicken breasts in a 9x13 baking dish. In a bowl, mix the next 3 ingredients. Pour mixture evenly over the chicken breasts, cover baking dish tightly with tinfoil and bake at 350 degrees F for one hour. Serve with rice or pasta. The chicken juices and sauce can be ladled over both chicken and side dishes.
